1. The fastest way to defrost meat is under a cold running tap, but if you want to save water and speed things up a bit, place your meat on an aluminium sheet tray. Aluminium is a great conductor of heat and defrosts frozen meat much faster than a wooden cutting board or wood or stone countertop. It also works on soups, stews, and anything frozen flat.

2. Store fresh herbs as you would fresh flowers - in a jar of water on your countertop. Pluck off what you need and change the water daily. They’ll last two to three times longer than they would in the fridge.



3. What do you do with that last bit of wine that you just cannot finish? Don’t let good wine go to waste! Freeze leftover wine in ice cubes and use them later to add to sauces like bolognese. Simple!




4. Don’t throw out the last bits of jam in the jar. Add equal parts oil and vinegar to the jar, give it a good shake, and season with salt and pepper to taste to make a fruity vinaigrette instead.
