Honey Cake

(makes 1 standard size loaf)

Ingredients:

3/4 cup sunflower/canola oil

3/4 cup castor sugar

2 eggs

250g (2/3 cup) honey

1/2 teaspoon bicarbonate of soda 1/4 cup boiling water

2 1/4 cups cake flour

2 teaspoons baking powder

1/2 teaspoon salt

2 teaspoons ginger powder

2 teaspoons ground cinnamon

Method:

1. Preheat oven to 170degC (it bakes at a low temperature).

2. Grease 1 standard size loaf tin.

3. In a large bowl, whisk together the oil and sugar.

4. Add the 2 eggs and whisk again till fluid.

5. In a small pot, heat the honey gently till it is warm (but not boiling!)

6. Meanwhile, put the bicarb in a small bowl and add 1/4 cup boiling water and mix till it fizzes.

7. Add the fizzing bicarb into the pot of honey (it will bubble and rise up).

8. Add this immediately to the oil/sugar mixture and whisk.

9. Add the flour, baking powder, salt, ginger and cinnamon.

10. Whisk until everything is just combined (do not over-beat).

11. Pour into loaf tin

  • Do not overfill the tin (fill no more than half way as it will rise quite a lot)

12. Bake for 1 hour — use a cake tester to check if the cake is cooked through (it should come out clean).

13. Remove from the oven.

14. Set aside to cool before turning out the tin.

Note:

A tip for measuring honey/syrup:

— Oil the measuring cup before pouring the honey/syrup and it will slide right out!
