LAYLA BASHA - MALVA PUDDING

Layla Basha's Malva Pudding


Ingredients

2 Tbsp soft butter

Half cup brown sugar

Pinch of salt

2 tsp oil

2 eggs beaten

11/2 cups cake flour

1 tsp bicarbonate of soda

1 cup cold milk

1 Tbsp apricot jam

2 tsp brown sugar

Sauce

1 can evaporated milk

2 Tbsp soft butter

1 cup brown sugar

1/2 cup boiling water

1/2 teaspoon vanilla essence

Chopped nuts and cream and custard to serve

Preheat the oven to 180°

To make the pudding, cream butter, sugar, salt. Add oil and eggs. Add the flour and remaining ingredients, blend well. Turn out into a well-greased medium sized ovenproof dish and bake on the middle shelf of the oven for 30 minutes.

To make sauce, heat the ideal milk, butter, sugar and water in a double boiler and stir. Add the vanilla essence. Do not boil. When blended remove from the heat and pour over the warm pudding. Cut into squares and serve topped with cream and nuts and custard.
