Fillet Mignon with a Chili & Green Peppercorn Butter & Sauteed Mushrooms on a Cauliflower Puree.

Dish: A filet mignon with a chilli-and-green peppercorn butter & sautéed mushrooms on a cauliflower purée with roasted cherry tomatoes and zesty lemon green beans

Elements of the dish:

Beef Filet Mignon - Ingredients needed:

- Beef filet

- Black pepper

- Salt

- Olive oil

- Butter

- Garlic

Instructions:

1. Sprinkle some salt and black pepper on all sides of the steak

2. Heat the pan on high heat then pour in olive oil

3. When the oil is hot, pan fry the steak for 3 minutes per side. Note: If the cut is thick, you’ll need to pan fry the sides.

4. Continuously baste the steak in butter

5. Preheat oven to 180 degrees Celsius.

6. Bake the pan fried steak for 6 to 8 minutes.

Chilli-and-green peppercorn butter and sauteéd mushrooms- Ingredients needed:

- Green peppercorns

- Red chilli

- Butter

- Garlic

- Lemon

- Mushrooms

- Olive oil

- Salt

- Black pepper

Instructions:

- Chop up mushrooms

- Sauté mushrooms

- Melt butter in a pan

- Add chillies, green peppercorns and garlic

- Simmer until fragrant for 2-3 mins

- Squeeze lemon juice into butter

- Set seasoned butter and mushrooms aside

Cauliflower Purée - Ingredients needed:

- Cauliflower

- Milk

- Butter

- Cream

- Salt

- Pepper

- Cumin

- Garlic

Instructions:

- Chop up small pieces of cauliflower

- Boil cauliflower in milk, cumin and garlic until tender

- Drain cauliflower (saving the milk for later) and transfer to blender

- Blend cauliflower, gradually adding cream and milk from earlier on until smooth

- Add butter, salt and pepper to taste

- Push through a fine sieve till a silky smooth purée is formed

Roasted Cherry Tomatoes - Ingredients needed:

- Cherry tomatoes

- Balsamic vinegar

- Olive oil

- Salt

- Pepper

- Garlic

Instructions:

- Toss cherry tomatoes in olive oil, black pepper, salt, garlic and balsamic vinegar

- Roast in oven

Lemony green beans- Ingredients needed:

- Green beans

- Olive oil

- Lemons

- Salt

- Pepper

Instructions:

- Chop up green beans

- Blanch green beans

- Toss in pan with olive oil and dressing
