Recipe: Mini Cheese Muffins

MINI CHEESE MUFFINS

(makes 12 mini or 6 normal size)

Ingredients:

  • 1 cup flour
  • 1 Tablespoon sugar or xylitol
  • 1 1/2 teaspoons baking powder
  • 1 1/2 Tablespoons mayonnaise
  • 1/2 cup milk
  • 2 Tablespoons oil
  • pinch salt
  • 1/2 cup grated cheddar cheese (about 100g)

 

Method:

      1. Preheat oven to 200degC.
      2. Spray a mini muffin tin with with Spray ’n Cook.
      3. In a big bowl, mix together the mayonnaise, milk, oil and salt.
      4. Add in the flour, sugar and baking powder into the same bowl.
                • Don’t overmix it!
      1. Add in the grated cheese.
      2. Spoon a little mixture into the mini muffin holes.
      3. Bake for 12-14 minutes
                  • until muffins are golden brown and when pressed, rise back up easily       (— get an adult to help you with this).
                  • Bake for 16-20 minutes for normal size muffins

Remove from oven and cool on rack.
