Recipe: Mini Cheese Muffins
MINI CHEESE MUFFINS
(makes 12 mini or 6 normal size)

Ingredients:
- 1 cup flour
- 1 Tablespoon sugar or xylitol
- 1 1/2 teaspoons baking powder
- 1 1/2 Tablespoons mayonnaise
- 1/2 cup milk
- 2 Tablespoons oil
- pinch salt
- 1/2 cup grated cheddar cheese (about 100g)
Method:
- Preheat oven to 200degC.
- Spray a mini muffin tin with with Spray ’n Cook.
- In a big bowl, mix together the mayonnaise, milk, oil and salt.
- Add in the flour, sugar and baking powder into the same bowl.
- Don’t overmix it!
- Add in the grated cheese.
- Spoon a little mixture into the mini muffin holes.
- Bake for 12-14 minutes
- until muffins are golden brown and when pressed, rise back up easily (— get an adult to help you with this).
- Bake for 16-20 minutes for normal size muffins
Remove from oven and cool on rack.
