The reason I love this cake is that it is made in one bowl and can be mixed by hand.It is a moist cake and  can be personalised by adding any extras that you want. It is ideal for the sweet toothed person who wants a treat during half time during a Rugby match and also epitomises the sweet victory of the Boks!!!
 
Ingredients:
One and a half cups sugar
1 cup oil
3 eggs
3 cups of peeled and cored apples that have been cut into small pieces
3 cups flour
1 teaspoons bicarb
1 teaspoon baking powder
 Half teaspoon salt
2 teaspoons cinnamon
2 tablespoons vanilla 
 
Method:
Pre- heat the oven to 375 degrees.
Put the sugar and oil in a large mixing bowl and stir.
Add in 3 eggs and mix all together.
Add the apples and incorporate.
Fold in the flour, bicarb, baking powder and salt and cinnamon.
Add the vanilla.
Batter will be very thick
At this stage you can add in any optional extras eg raisins, chopped nuts or even chocolate chips!
Pour batter into a greased pan of choice. I usually use a bundt tin and have even baked  this recipe as muffins.i
Bake the cake for approx. three quarters of an hour but please check as all ovens vary. Muffin time will vary.
